Almond Blossom is a little bit bitter: nutty but nice!  It is a dark honey for those of you who love strong honeys.  In February, in California, we take our bees to the almonds to pollinate the almond blossoms.  While pollinating the almond blossoms, our bees gathered the bitter almond nectar.  This nectar is too strong to use.  After the bloom has finished, we move the bees back to the S.F. Bay area where the late winter wildflowers & Eucalyptus are blooming.  The bees gather new nectars which are stored in the honeycombs.  When this mix of varieties is extracted,  the different nectars blend naturally to create this unusual honey. This California Winter Honey is a must for the honey connoisseur.
