Eucalyptus-Acacia Honey ~ Eucacia-licious! The first blooms of the year produce our California winter honey. Blue Gum Eucalyptus trees begin blooming early in December. The Acacia trees begin blooming side-by-side with Eucalyptus in January. The bees do the mixing for this sweet fresh taste which is neither strong or medicinal because the Eucalyptus taste is softened by the Acacia nectars. This is a very popular honey because it tastes so good. Chef Clint Cook from Gourmet Temptations, bakes an incredible honey bread with this variety. It is a good honey to use for ice cream. In California, during the winter months and early spring, this honey is the honey to use for allergy relief for pollen allergies.
